July School holidays and we decided to test out a new recipe from doTERRA and make Brunch; Cinnamon and Ginger Gluten Free pancakes. The recipe came from doTERRAs new Gourmet Wellness Box Autumn and Winter recipes booklet ❤.

The verdict: these were Officially rated 10 out of 5 by my son! Which clearly makes these GF Cinnamon and Ginger pancakes were the best EVER healthy homemade pancakes.

The recipe…

GF Ginger and Cinnamon Pancakes

  • 250g GF Self raising flour
  • 50g rapadura or coconut sugar
  • 1 large egg
  • 400g dairy free milk (or half milk half water)
  • 2 drops doTERRA Ginger oil
  • 2 drops doTERRA Cinnamon oil
  • Coconut oil / butter for frying

Instructions:

Combine all ingredients in a bowl (I use my Thermomix) and mix until smooth batter forms. Warm pan and cook until bubbles form ontop, flip when ready and repeat oiling pan in between.

Top with fresh berries, maple syrup or yoghurt of choice.
